Friday Fun

These days every day seems to feel like Friday, but today it finally is, and in our house Friday night often means pizza night! In times of stress or uncertainty, it's important to maintain some sort of routine -- and this is a routine we are more than happy to keep up!

Tonight we're looking forward to this spicy take on a classic favorite -- a sweet and spicy pepperoni pizza!



--1/2 lb pizza dough

--1 cup crushed San Marzano tomatoes

--1/4 cup basil pesto

--pinch of red pepper flakes, to taste

--1 cup torn mozzarella

--1 cup shredded fontina cheese

--1 jalapeno or serrano pepper, sliced

--2oz thinly sliced pepperoni

--1 cup fresh basil leaves

--honey, for drizzling

Preheat oven to 450 degrees. Grease a large baking sheet with olive oil.

On a lightly floured surface, roll dough out until it is thin (10-12 inch circle).

Transfer the dough to the prepared baking sheet and cover with the tomatoes and pesto. Sprinkle with red pepper flakes and top with cheeses, jalapeno, and pepperoni.

Transfer to the oven and bake for 10-15 minutes or until crust is golden.

Remove pizza from the oven and top with fresh basil and a drizzle of honey. Enjoy!
